Spring, first harvest from the Meg Garden. Cardoons are fairly new to me. Still trying to figure out when and what to harvest. Regardless, they are beautiful when they bloom this summer.

Yummy! I had several bags of chicken skin in the freezer and decided to render them today. A pint of schmaltz and a while plate of chicken skin cracklings. Crazy delicious.

I think it is genetic.
