Not my pic but my recipe comes out looking like this. This recipe is from eatwellenjoylife.com and it looks good but I can't do the honey the author specifies. My recipe is in the alt text because it's longer than a skeet. Nice mild flavor and a fun way to use rhubarb.
![Baked Chicken and Rhubarb
Makes 4-6 servings
Ingredients:
3 lb. chicken breasts and thighs or 1 cut-up frying chicken
1-2 Tbsp. butter
2 c. diced rhubarb (1/2-inch pieces; fresh is good but thawed frozen works)
1/3 c. sugar or equivalent sugar substitute
1-1/2 Tbsp. cornstarch (omit for lower carbs [sauce will be thinner] or substitute xanthan gum)
1-1/2 c. water
2 tsp. lemon juice
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
rice for serving
How to make it:
Put the chicken in a shallow baking dish. Brush it with butter and sprinkle it with salt. Bake uncovered at 375 degrees F for 30 minutes.
While the chicken is cooking, make the rhubarb sauce. Combine the cornstarch (if using), sugar, rhubarb and water in a saucepan. (I start with a little less water so I don't have to thicken it so much later.) Cook and stir over medium heat until the mixture boils. Keep on the heat until the sauce is clear and thicker, about 2 minutes. Add the lemon juice. If using xanthan gum, add small amounts gradually until you get the sauce consistency you want. Let it all cool down.
When the chicken is done and the sauce has cooled, spoon the sauce over the chicken and sprinkle the cinnamon and nutmeg over it all. Put it back in the oven and bake 20 minutes longer. The internal temperature should reach 175 degrees F after resting.

Recipe is too long for a skeet but it fits in alt text. I don't remember where the original came from but it's been adapted over the years.
