most modern places don't do carts anymore so you just tick off boxes on the menu and hand it in - can specify # of plate/basket in the box

hmm the main things I'd note is that yumcha is a brunch/lunch thing so it will be harder to find at night, and if you're at a traditional place with carts, each will only hold 1-3 types of dishes and the aunties will call them out so just familiarise with the names? they can show you too though

my city! you seem very solid on what you want to do and HK is extremely easy to navigate as a tourist but I always enjoy yapping about this place so if you want to know anything I'm open!
