It was really off the beaten track down more of a residential street, and like 2 doors down from a mechanics. Not sure the name but I think the guy was Bruno. Set menu including wine and grappa was like 13 euros. He kept warning us about the very strong cheese

You’re not meant to make them this early, but I’ve not done them before and didn’t want to get stage fright for the main event

It’s a very wet dough, if you’re not used to them. Flour the surface and your hands a lot, and fold it up on itself a few times to get some height to the baguette
