If it's the fat, one way i used to do is cut through the skin on the back, and pull it off, even down the legs, in one piece. Flatten in a rimmed baking sheet, and roast until the fat is rendered. Drain and you're left with a giant crisp duck chip. Saute the cut up quarters with a sauce.
