4. Make sure the vinegar rises at least halfway up in the casserole dish.
5. Allow to age overnight. Mix layers, next morning, so top layer isn’t too dry.
6. Serve cold as side or sandwich topping. 3/3

Noni’s Fried Zucchini with Mint in Vinegar
Small zucchini
Olive oil
Fresh mint
Balsamic vinegar
Garlic
1. Slice zucchini.
2. Heat oil in skillet and fry zucchini until lightly brown.
3. Remove zucchini from skillet and cover the bottom of a casserole dish with one layer of zucchini. Scatter mint
