TES/Bethesda has always struggled a bit with visual style, I think. They seem to hang out on the near side of the uncanny valley, without really committing to realism or fantasy. That said, you're totally right that the overly realistic look doesn't work as well for Oblivion.

All of the maps use 10+ invisible mesh pieces for their collisions. The corner is a separate model from the back wall, for example. My guess is the early versions of these models overlapped each other, which could easily cause weird bounces like this.

The actual modeling isn't too bad, but the course layout is 95% of the time and effort. I think I burned myself out by reworking it for probably 12 hours total.

Closest answer for me would be No Man's Sky. I've technically played it for 2 hours, which is enough to experience about 0.0000002% of the game.
