It's quite staggering, but really all of the necessary set up in AGOT is in the first few chapters. King Robert, The Others, Targaryens etc.Everything else is conveyed through the story naturally without huge exposition dumps. I think k his background in short story writing really helps him in

What differentiates Martin from other fantasy is how brilliant his prose is. In my experience other fantasy/sci-fi is often somewhat clunky and stiff or overexplained. Martin's way of writing allows all the necessary information to be conveyed elegantly and leaving the rest to the characters.

There was generally just less things to talk about when the state reduced in size so much. 20 - 30 year reigns could be summed up in one episodes.
