Occasionally I’m in the mood for congee. I used water, a little salt, chicken thighs, green onions, to make the broth. Pulled the thighs after 25 minutes and removed the aromatics. Added rice and let that simmer for about an hour partly covered. Added anti of water about 40 minutes in. 1/2

Wanted congee for lunch so decided on an oyster and mushroom variation. It’s pretty good! Oysters are a tad overpowering though. Probably should have used cod or scallops.
