Fair - my impression of him was that he's about the same age as the twins, just growing already and not from a privileged background. But as just a small side character it's pretty vague :)

How about Constaint of the Heavensward PLD quests? The quest line is atrocious but he at least rewards us with a suitable "...That's the stupidest thing I've ever heard." right to the trainers' faces and seems overall decent company material.

I love how the Estinien comments acknowledge him as a thoughtful and mature guy. Endwalker did G'raha dirty but somehow it rarely comes up how a HW character of a senior officer in a serious military, perceptive and (mostly) reasonable, is now comic relief / dumb muscle so much.

And they seem to have always had a sweet tooth, a number of dessert recipes are described as traditional and if you consider HW to represent Ishgard alone, they have the most recipes for sweets of all city states.

HW is "Highland", and Ishgard at war since forever, so probably not that drastic a change.
Root veg: beet soup a favourite of Carvallain's, Coerthan carrots would originate there too. An FSH(?) quest says sth along the lines of all their soldiers learn fishing. Figs were brought over by Sharlayans.
