Can I get uhhh... Blue?
Assuming you're going to use Cycles in Blender and do video edit, the RTX 5070 TI is probably the best bet. You'll get better support for most software since developers tend to prioritize support on NVIDIA graphics cards (larger user base and CUDA is a more mature GPGPU API than AMD's ROCM).
