Probably my last visit to Palmer's. Another of my favorite taverns will soon be closing its doors. Hitting it hard tonight. Will always remember the $5 dollar huge shots of Chartreuse they used to serve.

Got the results of her biopsy and there was nothing out of the ordinary. Now she just needs her hair to grow back and everything will be normal. Such a relief

NY style pies tonight. Will take 75 grams of dough out next time so they get stretched thinner for 12 inch pizzas. Mine was in about a minute too long. Used that info to make my wife's pizza a better cook. Life comes at you quickly at 550 degrees.

Was worried it would be a gimmick with the Klimt art on the label.
Really really nice. Salty pears up front with a bone dry finish.

First go at a Sicilian style pie on this fine Sunday. Used a Detroit pan because it's what we have. Was a battle on mixing day with the 86% hydration, highest I've ever gone. Was surprisingly easy to handle today. Had enough spare dough to make a little focaccia loaf.

Our girl Frosting had to get some bumps removed for biopsy. Doesn't seem to mind the new attire she has to wear for the next week or so while she heals up. Her sister Eleanor is definitely giving her support.

Tried my Detroit style dough as a same day pie vs the 3 day cold ferment I normally do. Very similar rise and taste. Now we have options depending on the time available. Dig it

One of our local pizza joints "Need Pizza" does a nice play on New Haven style pizza. Tried to replicate it tonight and it turned out pretty dang good.
