I had good luck desulfonylating an alpha-sulfonyl ketone using activated Zn dust (wash dilute HCl, EtOH, Et2O, dry) in DMA if MeOH is problematic for solubility or reactivity reasons!

Carbon steel can be quite nonstick! Much different surface chemistry than stainless and typically thinner & lighter. There’s good reason it’s a traditional wok material.

Depends: is the required pre-dunk nibble of a TimTam a plus or a minus? Personally, I want my cookie dunkable straight from the box.
