Sam made Cajun red beans and rice a few days ago. We went home with some.
As fusion cooking is in now - Cajun red beans with rice with couve. Love the egg with it to throw a touch of Asian into the mix.

Hiked the Black Canyon Trail today. Beautiful area. Saw a lot of wildlife. 9.7 miles, a bit over 1,000 feet of elevation.

A true homemade “Egg McMuffin”. Lori made the muffins from scratch from her sourdough starter. Eggs, Swiss cheese and ham.

A slight variation from last night. We had enough veggies and noodles left over to make another Vietnamese stir fry tonight. This time, shrimp with some twists on the sauce.
