I highly recommend the roasted veggie tray trick - we made it on Saturday and I’ve gotten a LOT of varied meals from it. This one had: brussel sprouts, fingerling gold and purple potatoes, grape tomatoes, black olives, lemon, crumbled feta, sticky balsamic glaze, olive oil.
