You can't target something without radar dude. You're not going to be able to intercept something that fast by sight alone, even suggesting it is just crazy.
It takes a targeting computer with proper data to intercept something moving so fast.

Certain hypersonic missiles actually create a plasma field in front of the craft which blocks radar signals and prevents detection. So the idea that "speed != stealth" is objectively false.

all they need to do is be capable of mid flight correctional movement *(which they are)* and any interceptor not moving at equal speeds, will simply be incapable of intercepting the new flight path.
