I like that in Fantasy Life i, in Ginormosia, you get full control over how tough you want the enemies to be. You can increase or decrease the difficulty of the different areas however you please.
Of course you can't really get any good loot unless you put them high level, but - 🥲

I don't know how well it works because I used it only once years ago myself, but I know Clip Studio Paint can work with vector layers. Might also be worth looking into?
