From my experience, the trick is to not cook it for too long. And also remove the softer center part if you can, as that gets mushy extra quick.

Cauliflower: great, but kinda close in texture to broccoli.
Spinach: also nice, plus it can be eaten fresh as a salad or cooked.
Kohlrabi (personal favorite): works raw, fried, or cooked!
