Tech had a sort of pseudo-mascot when I was there around 2006 that was a giant stuffed penguin haha. Eventually the admin replaced it with a living bulldog named Jerry, but you know if you're willing to get weird with it, the Arkansas A&M Penguins are right there

I'm sure you've already run into this in your research but as an Arkansas Tech alum, there's a big Ag program there. So I think this would fit in really well!!
