They grow really quickly, but require very carefully treated conditions to grow correctly.
And sometimes they might continue growing even after harvested, while in your fridge!
If they look really fuzzy, it's most likely not mold, just mycellium growing.

I like oyster mushrooms fried in butter with some salt. They are a really good snack!
They tend to be really low on calories, so they aren't that good as a basis for feeding yourself.

Gastronomically some people consider them vegetables, but I disagree strongly. They taste closer to mean than to vegetables or fruits.
They can't really be frozen, but you can dry them for use in some dishes, although sometimes the texture and taste change a lot.

As something a lot more basic, mushrooms are NOT plants, they are actually closer to animals. They belong to the 3rd eucariotic kingdom, the Fungi.
They are so important to the environment that nowadays it's no longer just flora&fauna, it's Flora, Fauna and Funga

There is no information on toxicity about *most* mushrooms in the world, because most people won't dare to try unknown new mushrooms, and the ones who do don't usually document things correctly.
And science hasn't looked into mushrooms as much as one would think. They are very unknown beings

Some toxis or psychoactive mushrooms:
Destroying Angel: Cool name and beautiful looking
Death cap: Responsible for most deaths
Amanita muscaria: Poisonous, psychoactive, and really famous
Psylocibe cubensis: Most famous psychoactive, being researched for a lot of therapy uses nowadays!

Basically no mushroom is considered dangerous to the touch, although only the deadly japanese Coral mushroom can be irritant to the touch for some people.
You can taste even the most poisonous mushrooms, as long as it's a small piece and you never swallow.

Some interesting examples of mushrooms are (I'm more used to names in latin, but I'll use the common names here):
Inky cap (it dissolves into spores)
Flowerpot Parasol (Very common, and very bright!)
Pagoda mushroom, particualrly Barbie Pagoda
Beefsteak mushroom

You can classify them based on how the spore-generating cells are placed. Gilled mushrooms, mushrooms with pores, mushrooms with 'teeth', and others like puffballs or bird nests.
You can also classify them in stiped mushrooms (with stem), shelf mushrooms, and others (again, like puffballs).

Everyone who wants to find mushrooms should have a 'local' book with pictures of the ones around, because theya re sos pecialized and vary a lot from area to area. Because of that, internet is not usually a good resource to ID them

And mushrooms can evolve incredicly fast, for a macro-organism. They mutate and evolve at rates closer to those of micro, so they can adapt to incredible conditions.
There's even a mushroom known to grow underwater!

(And they come in awesome colors and shapes)

I really like mushrooms!
One of the things I like the most is how their cells are a lot less diferentiated than ours.
The mushroom cap itself it's basically made of the same thing all over (except the part that makes spores), and it's little more than a mass of mycellium with a different shape/color
