Christmas dinner this year is a reverse-sear rib roast with two sauces: a Bordeaux pan sauce with remaining jus + au poivre with shallots and Cognac. Wrapped in cheesecloth in the fridge for 5 days. The Acolyte was indefensibly bad — I’ll leave it at that and won’t expand (dead horse). Skeleton Crew, though, was legit “pretty good!” I had fun as a lifelong 40-something Star Wars fan with no kids. My wife enjoyed it as well. Give it a try if you haven’t!

In winter we switch to arugula for pesto, which l think I may actually prefer! Favorite application: drizzled on a reverse-seared ribeye that’s been marinated in olive oil, garlic, rosemary, and salt, served on polenta or homemade pasta (the latter tossed with more pesto).
