Why the definition of a "worthy Opposition Leader" has come to be lauded for being a "nay-sayer" to social harmony and progress, eludes me.To me, a good OL would be someone who checks the excesses of government, makes laws better and fairer. Co-operates.

I agree re mint and walnuts etc. When Marcella condescendingly gives instructions for the food processor she says never blitz the cheese. Always stir through at the end. She also stirs through a knob of soft butter to finish it off.

5 if you count pecorino and Parmesan separately. I sometimes add a big red chili and a clove or two of garlic to the oil as it’s gently frying the pancetta but remove them before using. That’s a Marcella-ism.

The Essentials of Classic Italian Cooking is the bible! She’s idiosyncratic and at times quite pedantic (eg, if you can’t make your pesto in a M&P don’t bother…..but if you must use a processor, do it this way) but that makes her endearing. SC’s carbonara is the best I’ve come across.

Likely very similar. Marcella’s is about 6 hours. My grandchildren have never heard of her so in our family it has notoriety as Pa’s 6 hour sauce. Thank you Marcella!
