Which ones? Many are used for practical purposes like preservation, improving texture, etc. They get refined so the product can be made consistently and reliably.

I thought the problem with these foods is that they’re so easy, tasty, and available everywhere that people tend to eat too much of them, not that the ingredients have been refined into individual chemicals with long names.

For me it was the other way around: he started off with a seemingly good point about 3x the minimum grocery budget no longer being a good proxy for the cost of living, before going off the rails with his methodology to reach that fishy conclusion.

Big Springs is pretty incredible, from a geological perspective: a 100-foot-wide river just flowing out of a hillside. Never seen anything like it.
