I grew up with it (in my very odd corner of upstate NY), and have made it a few times here in the UK, but it doesn't settle well with my wife, so I shall dream of week brined horse sauerbraten until I can get my fix next time I'm in Germany.

It's the week or two of 'draining off the (red) liquid' as the meat turns grey that I found most disturbing. Less so the pound or so of rock salt involved.

We did a dry rubbed corned beef once, and it was amazing, but a mildly terrifying process.
