I'd also add a Chinese style chefs knife, it's not a cleaver, but the broad blade comes in useful for all sorts of stuff when prepping. Almost the only knife I use these days.

In Australia at least 'unlimited spending' isn't really the case, less than 0.5% of GDP. I think publicly funded research in most countries out performs what could be expected based on investment. www.industry.gov.au/news/what-do...
