Aubergine… cut as chunky chips - salt, rinse, dry, oil, season with arosto di patatine… 160 deg till soft then sack up to 200 for a crispy outside … add the tomato as per yesterday…

I need good ways to recreate my favourite fried aubergines slices from Greece - thinking it needs some kind of coating to make them steam internally… otherwise just drying out
