How accurate can they be? One batch was tested at one point in time, x months later, using different ingredients cooked by someone else, will the results be anywhere near the same?

Pâte de Coing (Quince cheese) seems to be the only thing they make around me here in France. Quinces aren't ripe yet though.

Wrong, it's spoons, forks, knives, other stuff for eating with. Cooking tools are in the other drawer.

Interpol are based here in Lyon but unfortunately I don't know anyone that works there. Lyon is a great place for food, especially if you like offal.
