You can see the cheese darkening as it dries. A little surface mold has been wiped off.

Last day of salting. Cheese smells like Havarti. Reduce aging temperature to 56, 81% humidity. Aging time will be 4 to 5 months.

This cheese rests for two days and is then dry salted. Aging space is 62 degrees 95% humidity.
