Pecan season!
The biggest harvest ever for me, around 80-100 lbs. I soak the nuts in filtered water w/ sea salt, this removes the enzyme inhibitors, enhancing digestion, increasing nutrition, and being dehydrated at 105 d. keeps them raw. BTW, walnuts lose ALL bitterness when soaked.

Here is the 2nd batch of pecans processed. The box weighed 18 lbs. After cleaning, soaking in filtered water w/sea salt, and then dehydrating for almost a day, I have 6.4 lbs ready to consume. Soaking removes enzyme inhibitors. Drying at 105 d. keeps them raw.
3 or 4 boxes left to go..

Kinda left a mess in the kitchen....not sure which version of myself is responsible....

The Pingualuit Crater in northern Quebec—a geological marvel created by a meteor impact 1.4 million years ago. It has a diameter of 2.14 miles and houses Lake Pingualuk, is 876 feet deep. This lake has some of the purest water on Earth, it relies solely on rain and snow.
