As someone who discovered the Persona series thought Joker's inclusion in Smash ultimate, I think that there's many people who should give a try to the series, even if they don't like turn based combat or JRPGs
They offer such a great experience compared to other turn based games

To make sonic 06 good you have to get rid of most of what it did, and at that point you are just making another game
A remake of Sonic 06 is an interesting idea, but short of it taking 1 or 2 interesting *concepts* and otherwise completely rebuilding everything - plot and all included - I can't really see the point in it.
