In case you’re wondering how that Irish leg of lamb turned out … happy Easter to all.

A thing of beauty. Stopped by Kearney Butchers in Waterford for a leg. Thomas brought out the whole hind half and asked me how I wanted it cut. The craft of butchering is alive and well in Ireland. And did I mention this is mountain lamb from only 20 miles away? That’s our Easter sorted.

Yet another Irish sunset. It’s getting boring.

Perfect sunny day in the Sunny Southeast: long walk at Kilfarrasy Beach, followed by lunch at Mezze in Tramore: Cauliflower arayes.

Wow wow wow wow. Just finished Michael Connelly Books new one and it is a corker. I did not know how he stays so consistently excellent. He’s like mystery’s Shohei Ohtani.

Oh Mount Congreve, you never disappoint.

Holy cow. Kathy and I decided to splurge on our anniversary but we had no idea. Cashel Palace is amazing. Gorgeous facilities and warm friendly service. And this is the view from our room of the famous Rock.

Just kill me now! My local garden center in Waterford got a shipment of Meyer lemon trees! I dearly love them and our old house in Long Beach had a beauty that was 50-years old. But Ireland is hardly a citrus climate. But we do have a conservatory that stays pretty warm. So do I gamble €100?

Not mine, but these nice folks at Wexford Home Preserves make more than a dozen kinds of marmalade.

All in a day’s work — tasting 12 different marmalades made by Tom and Laura Sinnot at Wexford Home Preserves for an Irish Times Food story. Great marmalades and really nice folks.

It’s snowing in Waterford!

Hey @cormacscoast.bsky.social so glad to find you here. Walking the tidal flats at Woodstown Strand today during an extremely low tide, we saw a lot of these sticking from the sand. Could they be razor clams? Lots in that area.

Hook head and Loftus Hall were crystal clear. No Guinness, but seafood chowder at the Strand was the perfect finish.
