We're not stuck with it. The remaster/restoration until around season 15's release didn't use these techniques. Even though much of it isn't shot on film the extra bitrate goes a long way in making the videotape look better.

This was added in to the Novelisation of DotD, the Doctors even watch them and phone Cushing and talk about putting him in films after he's died (Rouge One wink wink)
