You're right that it won't be perfect, but remember that the crown of a baby hat will be a subset of the crown of an adult hat, so the view you're missing is the view of the adult crown-baby crown. You'll still get a sense of how the stripes break over a variable set of stitches/round.

If you want to see what your hat could end up looking like, look up your yarn on ravely, pull up the other projects made with it, and then sort by which of those projects are hats.

Your stripes aren't going to get out of sync, but the only way to ensure an even striping throughout the crown and body of the hat is going to be to cut your yarn and ensure the stripe length yourself.
