Interesting clay. Not available outside of Australia, but I could probably make something similar if I could find a source for a black trachite grog. They're the black speckles in the clay and melt or soften at raku firing temps because they have a high volcanic glass content.

This is a willful misreading of CFR 278.2a,b, and c which only apply to SNAP coupons, not those issued by a grocery store. It probably does not apply at all in the case of EBT cards where no SNAP coupons were issued.

Luckily there's a simple cure for most acid problems: overfeeding. If you normally feed 1:1:1 (starter, flour, and water) try feeding 1:5:5 or even 1:10:10. It will take longer to ferment, but you should get a significant decrease in acidity, and a much healthier yeast population.

Highly acidic starters usallly come from waiting too long to feed the new batch, a >85 degree fermentation temperature, etc. They are unfortunately a problem even for a flour based starter over time periods longer than about 4 weeks at room temperature.

Thanks. I'll give them a try. I love the oolongs from Taiwan that I've tried. Until now I've ordered from suppliers over there, Eco-Cha.com in particular, but shipping has doubled.
