Baked Pat O’Neill Black Pudding Boudin, Apple & Mango Purée, Cashel Blue Ice Cream, Shallot Crisp, Guinness Jus Gras. Nasturtium flower. Not my starter (I don’t like black pudding). Probably the most interesting & Irish dish of the holiday.

After the worst ever Croque Monsieur on the ferry (smeared with tomato pickle 🤮) the Irish gourmet trip in country house hotels around @wexfordopera has got off to a highly promising start. This hotel is palatial.

Very good choice of reasonably priced wines at the Inis in Dreux. Very good new hotel with a classy breakfast.
