I've got this one from The Gut Repair Cookbook by Dr. Josh Axe, we made it last night.
Kale and Butternut Chicken Soup: 4 serving sizes, time to prepare is 45 mins. Ingredients: -1 tbsp coconut oil -4 cups chopped & peeled butternut squash (or a 20 oz package of it) -4 cups chopped kale w/ stems removed -1 cup diced red onion -3 cups of shredded chicken -4 cups chicken bone broth -2 tbsp chopped garlic -1 tsp each sea salt & black pepper - 1/2 tsp ground tumeric Directions: 1. Heat the coconut oil in a large soup pot over medium-high heat. Add the squash, kale & onion & saute for 3-4 minutes. 2. Add the chicken, broth, garlic, salt, pepper & turmeric and stir. 3. Put a lid on the soup pot & let simmer over medium heat for 25-30 minutes, or until the squash is cooked through.
