Also, this isn't quite pre-history, but Leif Weatherby's book is pretty good on the linguistics and phil of language behind llms, specifically.

Babbage's On the Economies of Machinery and Manufactures does a good job of linking labor with computing. And a few of Ada Lovelace's notes from "Sketch of the Analytical Engine" reflect on AI, general computing, and electronic music. She also comes up in Turing's work.
