Q: Why does a baker’s dozen mean ‘thirteen’?
A: Because a yeasted batter is a differential equation.
Thirteen freshly-made crumpets on a cooling rack. Funny thing about a batter that has yeast in it… it doesn’t stop rising just because you’re ready to use it. So, if you’re not using it all at once (say, you made enough batter for 12 crumpets, but your griddle only has space for 6 at a time), you’ll end up with more than 6 crumpets of batter (by volume) when it’s time for the second batch.
