I think you've already got good advice, go with your gut and make things make sense. But I still find some numbers helpful, so I normally look at the Swords and Wizardry dungeon encounter tables which give HD and number appearing for each level. So first level you might find 2d6 1HD or 1 4HD monster

Very interesting read, I often find myself wanting more game in the short game I have for sessions.. i feel like a caller is probably instrumental in moving play along.
