My take on the Filipino fruit salad for the restaurant I work at. "Sa Buena" Tartelette. Gluten free Sablée with cranberry jam, pastry cream and spiced fresh apples. Topped with coconut cream chantilly and flavoured almond tuiles(pandan and mango).

"Mera Mera no mi". Peach mango baked Alaska. Peach mango sorbet and sliced peaches on a cream cheese pound cake base enveloped in a swiss meringue. Made for a Japanese-Filipino popup. Forgot to take a crosscut photo...
