It's that we see EU visitors often suggest trips that simply aren't practical because you don't grasp the size of the US. Below is all of Germany superimposed on the state where I live (Washington). Your country is about the same size as my state and the state just south of us, Oregon.

Weekly sourdough. This is 9% each of spelt, rye and rouge de bordeaux, 41% King Arthur AP and 32% Cairnspring T85 Expresso bread flour. 80% H2O. Mild, complex, slightly sweet taste (no sugar etc added), soft crumb.
