Ok I figured out the opera and unfortunately it's not a new one, it is Don Carlo by Verdi now there are no particular recording that I love over one, but I do prefer the 5 act Italian version and this one has it!

So as I keep reading tonight, I recommend this recording of Les Troyens! The whole cast is good and it isn't even a quarter of them, the whole thing is a good listen in general!

So to start, the salmon was very salty/sour and that's got to do with the Dijon mustard and lemon juice but the marinade overall is good.
