1/4 lb globs of 75/25 akaushi beef since we fancy 4 1/4 lb beef, still raw, just smashed on a very hot 14 inch cast iron pan, with some almost scorched broccoli at back left 1/4 lb smashed patties after searing one side, nicely dark brown although it's hard to see from the smoke/heat A white plate with a potato bun, which has 2 1/4 smashed burger patties with American cheese, shaved white onion on top. I added lettuce and mayo because that's how it should be. Also some (un)frozen French fries and some roasted broccoli

did a tomahawk steak for me and the boy while mom was away. smoked then seared - but while I got the temp to ~130, I forgot to account for carryover cooking and this ended up medium. Still delicious and tender despite my horrific crime 🍽️
raw ~1 and 3/4 inch thick"tomahawk steak" after dry brine for ~48 hours, sitting on very well loved/used stainless steel rack and cooking sheet ~1 and 3/4 "tomahawk" steak on a cutting board after ~2 hours in a smoker at 250, brought to ~110 degrees internal. "tomahawk" bone removed for next step, searing. there's a stabby knife on the board too "tomahawk" steak sliced after searing and resting. It's around medium which means I overcooked this shit before letting it rest. :(

Comfort food continues. Meatloaf riff on Serious Eats "Classic" recipe - instead of final browning/cook and ketchup glaze, I seared slices on cast iron.Not pictured are HEB mashed potatoes and homemade beef stock gravy. Next time I'll do the veggie dice smaller because it looked like a fruitcake. 🍽️
Large stainless steel mixing bowl with 2 1lb portions of raw ground beef (1 wagyu 1 grassfed), ~1 cup of sauteed carrot, celery, onion, garlic, mushroom all sitting on top of "the sludge" - toasted white bread, buttermilk, eggs, parsley Meatloaf cooked through sitting on a cutting board - generally golden brown, with chunks of carrots, bread, mystery poking through. Next time I think I'll food process the veg just a little bit. ~1 inch slice of meatloaf with a dark brown seared crust. Some pre-prepped green beans from HEB (yeah I saved time here) and a mostly blank white plate because this photo probably looks a lot better before I dumped 8lbs of HEB mashed potatoes on it (yeah I saved time here too). Also not pictured - scratch gravy from homemade reduced beef bone stock, whole milk, and butter.

fried some chicken last night 🍽️

Crust on the chicken is pretty decent and a nice golden brown Chicken breasts, thighs, wings, and legs resting on a wire rack in a shiny sheet pan. Crust on the chicken is pretty decent and a nice golden brown. There are a few darker spots on the chicken from where those pieces made solid contact with the bottom of the pan.
