After one hour, remove the kombu (5), and continue to simmer over low heat.
After another two hours, add lard, but this is an option. If you make ordinary ramen, perhaps lard can add a final touch, but if you make Cantonese ramen, it’s not necessary.
Then, after another hour, the stock is ready.

When the water has boiled, remove the scum and add
1) two onions (cut in two)
2) two potatoes (cut in two)
3) sliced ginger,
4) some garlic (cut in two)
5) a piece of kombu
and lower the heat.
