...and still have the individual mirror sections available as local drives. So you'd be using ZFS on a central server to rebuild the mirror on any machines that had been offline, when they came back online...
Like I said, probably a daft idea if it's even possible, but heh, a guy can brainstorm..

Wacky idea which I'm almost sure wouldn't work... on Allan's organisation's website, there's an article about building ZFS mirrors from iSCSI targets located on different hosts. Wondering if you could have all of your workstations providing drive space for one gigantic ZFS mirror pool...
