Break apart every multi-state and multi-national corporation in the world and institute strict upper size limits and mandate maximum "lowest paid wage to highest paid wage, inclusive of all stock and benefits" ratios - maybe 500 to one at most. Require collective bargaining units in every one.

You're straining all the solid matter out through the layers of cheesecloth/jelly bag, so all you get is the concentrated juice and pectin. When I did it, I didn't even need to add additional pectin - it set just fine, and the texture was completely smooth, like any jelly.

Oh, and a little lemon juice. Forgot that! Anyway, it's a good way to get rid of a lot of pears that aren't really good for straight eating anymore.

It's surprisingly simple! I made some for the first time a couple of months ago with pears from a friend's yard. Just need cheesecloth or a jelly bag, grate the pears (skins and all), simmer down with some ginger, strain for several hours, maybe add pectin, reduce, sweeten to taste.
