Thank you for the lesson, Samba. I'd always heard how hard it was to make pate au choux, but it was really rather simple! I baked two little test puffs (split and filled with sour cherry jam, yum), then piped out and froze the rest to bake at a later date. Thanks for taking the anxiety out of choux!
