Mushrooms were starting to cook down nicely so the bacon and shallots go back in to keep cooking and come together.

Pulled out the bacon and shallots. Pan deglazed and scraped. 3 sticks of butter (to start) to start and 3.5lbs of minced mushrooms go in the pan….

Going to be cooking two spatchcocked turkey breasts and decided to make a layer of duxelles under skin.
2 lbs of diced thick cut bacon and 2 cups of minced shallots are cooking down with a trussed bunch of thyme (since I hate plucking leaves). Mushrooms soon.

You know I’m missing YoungestAmazingDaughter™️ (away on study abroad) because I just volunteered to host Wednesday of Thanksgiving friends giving for her & friends & the parents- 2 years ago we deep fried turkeys and it turned into a frat party (TYVM parents 🤣)

Late night snack / seconds- don’t know if these count as chicharrones (it’s pork belly) or more appropriate to call it masitas fritas since I marinated then didn’t two step simmer/render then fry approach, but either way it’s delicious and the green sauce I made is 🔥

Years later, leading the Army’s component of the PEPFAR program, I’d visit hospitals across the central highlands of Kenya & see communities transformed for the better because the scourge of HIV was brought under control. We planted trees to commemorate these visits- a sign of lasting partnership.

In a Liberian town, far from the capital, amid new graduates of the Ebola management course- I gave a speech about how their courage & commitment would help their country break the grip that Ebola held on the nation. That we- the United States were both privileged & duty bound to stand with them.
