Once again, stiff sourdough starter is the way to go. Mine survived a 2 day trip from California to Québec and was just used for this 70% local whole wheat loaf. Poorly cut cuz the bread knife I have here is too short.

It's that time of the year again, I will wait until tomorrow as I have a can of Sierra Nevada Octoberfest beer to drink first. Since I'm moving out of the country in 3 weeks, this may be my last Elysian pumpkin pack. The Great Pumpkin is the best, followed by Night Owl.

I thought Sierra Nevada's Summerfest Lager was just OK so I used the last can to make sourdough bread. It's a little lop-sided cuz I put a lot of seeds in it, the hydration was high and I did not bother to do extra stretch and folds or coil folds.
