You absolutely can highlight text in Apple Notes. Select the text, then hit Shift-Command-E.

Or, in the Toolbar, click on the "Aa" icon, and on the top right you'll see a colored dot which allows you to change the color of your highlights.

1P has a lot of good qualities, but its Safari extension is pretty poor. Sometimes it works, sometimes it doesn't. Apple Passwords, thought not as feature-rich as 1P, is much more reliable in Safari, which is mainly why I've been so happy switching from 1P to AP.

You're so right. I'm finding Apple Passwords so much more reliable (and easy and fast), that I'm using it now in Safari for all my log-ins, but keeping 1P for all the secure notes (credit cards, identities, etc.).
